Basil pesto, fresh mozzarella, sweet cherry tomatoes, avocado, and cucumber – fresh ingredients that make the perfect salad for Spring and Summer. It’s a quick side dish that doesn’t involve much prep at all. I served this salad with grilled chicken and roasted potatoes, but it goes great with just about anything, even on it’s own! This recipe makes about 2 servings, but feel free to double it to have some easy leftovers. You can make your own Pesto sauce for this, or go the easy route and purchase store bought Pesto sauce. I really like the Trader Joe’s Genoa Pesto. They also have a Vegan one with Kale, Cashew and Basil!
Pesto Avocado & Mozzarella Salad

Ingredients
- 1/2 seedless cucumber diced
- 1/2 cup cherry tomatoes halved
- 1/2 avocado diced
- 1/2 cup mozzarella balls
- 2-3 tbsp Pesto sauce
- 1 tbsp extra virgin olive oil
- salt and pepper to taste
Instructions
- Add all ingredients to medium sized bowl. Toss well. Serve and enjoy!
