Optional: can of diced tomatoes or handful of fresh, cherry tomatoes
Instructions
Heat oil in large saute pan over medium heat.
While oil is heating, remove the sausages from their casings. Discard the casings.
Once oil is hot, add the ground sausage to the pan. Using a wooden spoon or spatula, break the sausage up into smaller bits. Saute until browned and cooked through, about 8 minutes.
To the same pan that the cooked sausage is in, add your diced peppers, kale and optional can of diced or fresh tomatoes. Stir ingredients so they are evenly distributed.
Continue to cook over medium heat, stirring frequently, until kale is wilted, about 5 minutes.
