Spicy Sausage, Peppers & Kale

Equipment

  • Large saute pan

Ingredients

  • 1 tbsp coconut or olive oil
  • 1 package hot italian sausage links
  • 4 cups chopped kale
  • 2 red or green peppers, diced
  • Optional: can of diced tomatoes or handful of fresh, cherry tomatoes

Instructions

  • Heat oil in large saute pan over medium heat.
  • While oil is heating, remove the sausages from their casings. Discard the casings.
  • Once oil is hot, add the ground sausage to the pan. Using a wooden spoon or spatula, break the sausage up into smaller bits. Saute until browned and cooked through, about 8 minutes.
  • To the same pan that the cooked sausage is in, add your diced peppers, kale and optional can of diced or fresh tomatoes. Stir ingredients so they are evenly distributed.
  • Continue to cook over medium heat, stirring frequently, until kale is wilted, about 5 minutes.
  • Serve and enjoy!
