Berry Baked Oats

Rise and shine to this nutritious breakfast! We love to start our mornings with a healthy punch of fiber, protein, and healthy fats. This recipe gives us all that. Best part? It's easy to make!

Ingredients

  • 3 cups gluten-free rolled oats
  • 1/4 cup pure maple syrup
  • 1 mashed banana, medium size
  • 1/4 cup melted butter or oil
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 2 eggs
  • 2 cups almond milk*
  • 2 cups mixed frozen berries (keep frozen)
  • pinch of salt
  • 1 tbsp ground flaxseed optional
  • 1 tbsp chia seeds optional

Instructions

  • Preheat oven to 375°F & grease a 13x9in casserole dish.
  • In a large bowl mix all ingredients together until incorporated.
  • Pour mixture into the greased casserole dish & bake for 30-35 minutes or until set and starting to brown on the top.
  • Remove from oven. Serve topped with additional berries, nut butter, or yogurt depending on your dietary preferences. ENJOY!

Notes

*unsweetened almond milk is our go-to in this but any milk will work.
