Chopped Power Salad

Ingredients

  • 3 cups chopped romaine lettuce
  • 3 cups chopped iceberg lettuce
  • 1/2 cup quinoa cooked
  • 2 scallions diced
  • 2 roma tomatoes diced
  • 5 slices bacon cooked & crumbled
  • 1 cup chicken diced
  • Feta cheese or cheese of choice

Instructions

  • Add all ingredients to a large bowl.
  • Top with dressing of choice and enjoy! We served ours up with a red wine vinaigrette.

Notes

Tips to save time & energy: purchase already chopped lettuce, Trader Joe's Just Chicken is a great option instead of cooking up raw chicken, fry up bacon in the microwave (less cleanup!), make a full batch of quinoa and save the rest for scrambling into your eggs for breakfast or as a side for dinner. *Can sub any type of greens you enjoy - spinach, arugula, or kale all work!
