Servings: 4 people

Ingredients

  • 3 lbs chicken wing sections
  • 1 tbsp baking powder (not soda)
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup hot sauce (Frank's Red Hot)
  • 2 tbsp butter or ghee
  • 1 tsp garlic powder

Instructions

  • Preheat oven to 300 degrees. Line a baking sheet with aluminum foil and place wire/cooling rack on top*
  • Pat chicken wings until completely dry and place in large bowl.
  • Add baking powder, salt and pepper to the bowl. Toss, ensuring chicken is coated on all sides.
  • Place chicken on wire/cooling rack, separated and not touching. Bake for 30 minutes.
  • While chicken is baking, make the sauce: in a small saucepan over medium heat, combine the hot sauce, butter and garlic powder. Whisk frequently until butter is melted. Remove from heat and set aside.
  • After 30 minutes, increase oven temperature to 425 degrees and bake chicken for additional 25 minutes or until crispy and browned.
  • Optional: broil chicken for additional 2-3 minutes for extra crispiness. Monitor closely so they don't burn.
  • Remove chicken from oven and place in large bowl. Pour buffalo sauce on top and toss to coat.
  • Serve with carrots, celery, ranch or your favorite side. Enjoy!

Notes

If you don't have a wire rack or want easier clean up, skip this and place the wings directly on the aluminum foil. They won't be AS crispy, but still tasty!
