Sheet Pan Chicken Fajitas

Equipment

  • Large sheet pan

Ingredients

  • 1.5 - 2 lbs boneless skinless chicken breast
  • 3 bell peppers any color, sliced
  • 1/2 medium red onion sliced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • Red chili pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  • Preheat oven to 375 degrees F and line a large baking sheet with parchment paper.
  • Add all ingredients to the sheet pan, including the spices and olive oil. Using your hands or tongs, mix until spices and oil are evenly distributed.
  • Spread out chicken, peppers and onion on the baking sheet.
  • Bake in the oven for 20 -25 minutes or until chicken is cooked through and veggies are tender.
  • Serve with fresh lime, avocado, rice (or cauliflower rice), and roasted corn.
