Preheat oven to 375 degrees F and line a large baking sheet with parchment paper.
Add all ingredients to the sheet pan, including the spices and olive oil. Using your hands or tongs, mix until spices and oil are evenly distributed.
Spread out chicken, peppers and onion on the baking sheet.
Bake in the oven for 20 -25 minutes or until chicken is cooked through and veggies are tender.
Serve with fresh lime, avocado, rice (or cauliflower rice), and roasted corn.
