Slice the sausage links into coins.
Coat a nonstick skillet with extra virgin olive oil and heat over medium high heat.
Add sausage to the pan and fry, flipping halfway through, for about 8 minutes or until browned on both sides. Remove sausage and set aside.
Add the broccoli and cauliflower to the same pan with 3 tablespoons of water. Cover and cook for 5 minutes, stirring halfway through.
Remove cover and add Chimichurri rice and 2 tablespoons of water. Stir and cook for 5 minutes or until rice is hot.
Add sausage back to the pan and cook for additional minute or two, or until sausage is warmed.
Spoon into bowls and enjoy!
