Preheat oven to 350 degrees. Grease an 11 x 7 inch baking dish with coconut oil.
Cut up loaf of bread into 1-2 inch cubes. Set aside.
In a large bowl, whisk together eggs, milk, cinnamon, maple syrup, vanilla extract and coconut sugar.
Fold in bread cubes into egg mixture and let sit for 5-10 minutes to absorb.
Place mixture into baking dish and bake uncovered for 45-50 minutes, or until center is set and golden brown.
Top with yogurt, fresh fruit and/or maple syrup if desired. Enjoy!
