Creamy Balsamic Kale Salad

This salad is made with fresh kale tossed in a creamy and tangy balsamic dressing. The dressing is made with mayo, a touch of honey, garlic and spicy brown mustard. Top your salad with dried cranberries, sunflower seeds, and some feta cheese. A side dish in minutes!

Ingredients

  • 8-10 C chopped kale
  • 1/4 C extra virgin olive oil can sub avocado oil
  • 1/4 C balsamic vinegar
  • 3 tbsp mayo I used Primal Palate brand
  • 1 tbsp coconut aminos
  • 2 garlic gloves minced
  • 1 tsp spicy brown mustard
  • 1 tsp honey
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Add chopped kale to large bowl.
  • In small bowl, whisk together salad dressing ingredients.
  • Pour dressing over kale and toss to coat.
  • Top with dried cranberries, sunflower seeds and feta cheese.
  • Serve and enjoy!

Notes

-Buy already chopped kale for even more efficiency. Trader Joe's kind is my go-to. It's organic, already chopped, washed and ready to go!
