Another quick and easy recipe we love that can be thrown together in minutes! Made with spicy sausage, fresh peppers and healthy kale, I have this meal almost weekly because it’s simple and so nutritious. I think the best part of this recipe is that it’s made with just 4 ingredients! No seasonings are needed since all that flavor comes through the spicy sausage. Feel free to toss in a can of diced or fresh tomatoes for extra flavor (we like it both ways, just depends what we have on hand!) Serve alongside crispy roasted potatoes or enjoy as is for a filling, healthy meal. You can use red, green or yellow peppers – whatever you prefer. Spicy Sausage, Peppers & Kale
Equipment
- Large saute pan
Ingredients
- 1 tbsp coconut or olive oil
- 1 package hot italian sausage links
- 4 cups chopped kale
- 2 red or green peppers, diced
- Optional: can of diced tomatoes or handful of fresh, cherry tomatoes
Instructions
- Heat oil in large saute pan over medium heat.
- While oil is heating, remove the sausages from their casings. Discard the casings.
- Once oil is hot, add the ground sausage to the pan. Using a wooden spoon or spatula, break the sausage up into smaller bits. Saute until browned and cooked through, about 8 minutes.
- To the same pan that the cooked sausage is in, add your diced peppers, kale and optional can of diced or fresh tomatoes. Stir ingredients so they are evenly distributed.
- Continue to cook over medium heat, stirring frequently, until kale is wilted, about 5 minutes.
- Serve and enjoy!
