Sheet Pan Chicken Fajitas

- Large sheet pan
Ingredients
- 1.5 - 2 lbs boneless skinless chicken breast
- 3 bell peppers any color, sliced
- 1/2 medium red onion sliced
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- Red chili pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- Preheat oven to 375 degrees F and line a large baking sheet with parchment paper.
- Add all ingredients to the sheet pan, including the spices and olive oil. Using your hands or tongs, mix until spices and oil are evenly distributed.
- Spread out chicken, peppers and onion on the baking sheet.
- Bake in the oven for 20 -25 minutes or until chicken is cooked through and veggies are tender.
- Serve with fresh lime, avocado, rice (or cauliflower rice), and roasted corn.
