I created this salad after my head was tucked in the fridge for minutes on end trying to think of a quick, easy side that’s both healthy & fresh. I had a bag of kale that needed to be used and condiments that I always have handy in my pantry. End result – this tasty salad that even my husband is obsessed with! I love the flavor of balsamic vinegar and this dressing has the perfect balance of flavors with mayo, a touch of honey, garlic and spicy brown mustard. Creamy Balsamic Kale Salad
Equipment
- Large mixing bowl
- Small mixing bowl
- Whisk
- Salad Tongs
- Measuring cups & spoons
Ingredients
- 8-10 C chopped kale
- 1/4 C extra virgin olive oil can sub avocado oil
- 1/4 C balsamic vinegar
- 3 tbsp mayo I used Primal Palate brand
- 1 tbsp coconut aminos
- 2 garlic gloves minced
- 1 tsp spicy brown mustard
- 1 tsp honey
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Add chopped kale to large bowl.
- In small bowl, whisk together salad dressing ingredients.
- Pour dressing over kale and toss to coat.
- Top with dried cranberries, sunflower seeds and feta cheese.
- Serve and enjoy!
