It’s perfect for a quick breakfast when you are sick of eggs on the regs, works as a tasty and nutritious snack or healthy dessert when your body is needing something sweet, and is super kid-friendly. If you are following an anti-inflammatory diet, good news! This smoothie is AIP, gluten and grain-free! Win-win-win! Made with only 5 ingredients, it’s quick to toss in the blender and have on-the-go.
One of my favorite ingredients in this smoothie is Blackstrap molasses. New to Blackstrap molasses? No worries here! Blackstrap molasses is a nutrient dense sweetener that is a byproduct of sugar cane’s refining process. It has the lowest sugar content of any sugar cane product, and is filled with vitamins and minerals that highly refined sugars lack. Some of the vitamins and minerals include (% daily value from 1 tablespoon):

I sometimes take 1 tablespoon a day as a supplement to get to my daily intake of calcium since I am currently dairy-free. Blackstrap molasses can be used in place of any sweeteners in smoothies, baking, cooking, you name it! The brand I use is Plantation Blackstrap Unsulphured Molasses and you can check it out here. Recipe Tips –

- If you like a thinner consistency smoothie, feel free to add 1/4 – 1/2 cup of cashew or almond milk, however this will no longer make the smoothie AIP compliant.
- If you want a sweeter smoothie, add 1/2 to 1 tsp more of honey.
- This smoothie is best when served immediately, but if you would like to meal prep, it will still taste good after being refrigerated for about a day or two.

Equipment
- Blender
- Spatula
- measuring cup
- measuring spoons
Ingredients
- 1 C pumpkin puree canned, chilled
- 1/2 C coconut milk canned, chilled
- 1/2 C ice
- 1 tbsp blackstrap molasses
- 1 tsp cinnamon
- 1 tsp honey
Instructions
- Place all ingredients in blender and blend until smooth. Serve immediately.
- Top with sprinkled cinnamon if desired
