Inspired by Portillo’s (one of my favorite Chicago spots), we made this chopped salad with a healthier spin. It’s made with fresh greens, quinoa, crispy bacon, feta and grilled chicken. Gluten free and packed with protein, this salad is great for a complete meal. We love to meal prep with this salad and have lunch set for days. Use whatever lettuce you have on hand – kale, spinach, arugula, or mixed greens all work. Sub feta for your favorite cheese. Top with a healthy vinaigrette dressing or a creamy homemade ranch. Make it yours and enjoy it just the way you like!

- Try Trader Joe’s Just Chicken instead of cooking up raw chicken
- Fry up bacon in the microwave – less cleanup!
- Make a full batch of quinoa and save the rest for scrambling into your eggs for breakfast or as a side for dinner.

Ingredients
- 3 cups chopped romaine lettuce
- 3 cups chopped iceberg lettuce
- 1/2 cup quinoa cooked
- 2 scallions diced
- 2 roma tomatoes diced
- 5 slices bacon cooked & crumbled
- 1 cup chicken diced
- Feta cheese or cheese of choice
Instructions
- Add all ingredients to a large bowl.
- Top with dressing of choice and enjoy! We served ours up with a red wine vinaigrette.
