Switch out those eggs today for something different! We love this Chia pudding to start our day – it gives our morning a fresh spin on breakfast. Easy to make and it’s also a great snack for anytime of day. Made with minimal ingredients but gives you that punch of energy and fullness to keep you going at work. We like to top ours with fresh berries, cocoa nibs, honey and shaved coconut. You can make this recipe Paleo, Keto & Whole30 (omitting sweetners). Enjoy! Recipe Tips –

- Mix chia seeds and milk really well before refrigerating. I usually put it mine in the fridge and then pull it out after 20-30 minutes for another quick mix. I’ve found the Chia seeds tend to clump at the bottom of the jar otherwise.
- The Chia seeds and milk mixture will be liquidy at first, but don’t worry – it’ll set in the fridge.
- Make extra! Stock the fridge with these for a quick, healthy snack. This is one of my favorites to bring to work. I load mine up with fresh or frozen fruit, granola and nut butter for a filling snack.

Chia Power Pudding

Ingredients
- 1 cup coconut, cashew or almond milk
- 2 tbsp chia seeds
- optional: cacoa nibs, granola, shredded/chopped coconut, blueberries, raspberries, strawberries, drizzle of honey or maple syrup, sprinkled cinnamon
Instructions
- In mason jar or cup, whisk together milk of choice and chia seeds.
- Let sit for 3 minutes, then whisk again to break-up any clumping of chia seeds.
- Cover with lid and place in refrigerator for at least 2 hours or overnight until chia seeds are absorbed. Top with all the toppings when ready to eat!
