Rise and shine to this nutritious breakfast – made with oats, fruit, almond milk and cinnamon, it’s a perfect way to start the day. We love a good breakfast. It helps prepare our minds and bodies for the day ahead & keeps us full and energized until the afternoon. There are differing views out there about breakfast. Some say it helps metabolism get revved up, balances blood sugars and aids in weight loss. Others feel quite the opposite and are on board with fasting for health benefits. Whatever your view is fine by us, but we’re not quite ready to ditch our favorite meal of the day. Mornings can be hectic though – whether you work out, need to get the kids ready for school, start work before sun up or all the above. Choosing a healthy breakfast can be too time consuming. That’s why we love this recipe. Make it ahead and you’ll have breakfast ready to go for a few days! Hope you enjoy!

- Use any type of berries you like. We’ve only tested this with frozen berries. If you try fresh, let us know in a comment below how it turned out!
- We love the taste with unsweetened almond milk, but any type will work.
- It calls for 2 cups of milk. Some have tested this recipe and felt it was a little dry the following day. We haven’t tested the recipe with more than 2 cups of milk, but let us know if you try it and how it turns out!
- We love this recipe for breakfast, but it’s so tasty as a snack or a healthy dessert.
- Top it with Greek yogurt or some nut butter for extra protein.
Berry Baked Oats
Equipment
- Casserole dish
Ingredients
- 3 cups gluten-free rolled oats
- 1/4 cup pure maple syrup
- 1 mashed banana, medium size
- 1/4 cup melted butter or oil
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 2 eggs
- 2 cups almond milk*
- 2 cups mixed frozen berries (keep frozen)
- pinch of salt
- 1 tbsp ground flaxseed optional
- 1 tbsp chia seeds optional
Instructions
- Preheat oven to 375°F & grease a 13x9in casserole dish.
- In a large bowl mix all ingredients together until incorporated.
- Pour mixture into the greased casserole dish & bake for 30-35 minutes or until set and starting to brown on the top.
- Remove from oven. Serve topped with additional berries, nut butter, or yogurt depending on your dietary preferences. ENJOY!
