Do you remember having sleepovers as a kid and getting SO EXCITED when French toast was on the menu in the morning? This recipe brings me back to so many good times so I wanted to create it with a healthy spin for my family. Our French toast casserole is made with gluten-free bread, maple syrup and coconut sugar, and tastes just as good as your classic French toast! It is also made as a casserole so that it’s super easy to prep and bake. Serve it for brunch and top it with a dollop of yogurt, fresh fruit and maple syrup. There won’t be a bite left over, guaranteed!

Gluten-Free French Toast Casserole
Ingredients
- 18 oz loaf gluten-free bread I used canyon bakehouse gluten-free whole grain
- 6 eggs
- 2 cups almond milk may sub any milk; I used unsweetened vanilla almond milk
- 1 1/2 tsp cinnamon
- 1 tsp pure vanilla extract
- 2 tbsp maple syrup
- 2 tbsp coconut sugar
- Optional toppings: mixed fresh berries yogurt, nut butter, powdered sugar, maple syrup
Instructions
- Preheat oven to 350 degrees. Grease an 11 x 7 inch baking dish with coconut oil.
- Cut up loaf of bread into 1-2 inch cubes. Set aside.
- In a large bowl, whisk together eggs, milk, cinnamon, maple syrup, vanilla extract and coconut sugar.
- Fold in bread cubes into egg mixture and let sit for 5-10 minutes to absorb.
- Place mixture into baking dish and bake uncovered for 45-50 minutes, or until center is set and golden brown.
- Top with yogurt, fresh fruit and/or maple syrup if desired. Enjoy!
